Description
San Polo's Rosso di Montalcino, a winery by Marilisa Allegrini nestled in the hilly landscape of Montalcino, is a red wine made from pure Sangiovese grapes, cultivated in the vineyards of Vigna Rossa and Vigna d’Oriente, located between 430 and 450 meters of altitude, with a South and South-East exposure. The calcareous-clay soil and the spur cordon training system contribute to producing grapes of great quality, an authentic expression of the Montalcino territory.
After manual harvesting in crates, the grapes undergo a gentle crushing, preceded by a careful selection of the berries. Fermentation occurs in cement vats at a controlled temperature between 28 and 30°C, lasting 14-16 days. This is followed by malolactic fermentation in large oak barrels, where the wine matures for 12 months with a light toast, followed by a further refinement in the bottle before being marketed.
At sight, it presents a composite ruby red color, clear and bright. On the nose, it offers a fragrant and delicate bouquet, with hints of small fresh fruits, marasca, blackberry, and black cherries, completed by a touch of vanilla. On the palate, it is warm and soft, with a medium structure, balanced tannins, and an overall harmony that provides freshness and good aromatic persistence.
This wine pairs perfectly with typical Tuscan dishes with a strong flavor, pasta and risottos with mushrooms or truffles, pork, mixed grills, and medium-aged cheeses.
