Description

Scaia Dea Bianco by Famiglia Castagnedi is a partially dealcoholised white wine, crafted to offer freshness, immediacy and easy drinkability. It is made from white grapes and stands out for a modern, light style while maintaining a clean, pleasant aromatic profile.

Vinification involves destemming the bunches and a cold maceration of about one hour under reductive conditions, followed by gentle pressing at 8-9 °C with a pneumatic press in an inert environment. Fermentation takes place at low temperature, between 13 and 14 °C, with no malolactic fermentation; the wine undergoes bâtonnage once a week until bottling, is cold-stabilised and aged in stainless steel.

It displays a straw-yellow colour with greenish highlights. The nose reveals floral notes of acacia and jasmine, scents of elderflower and fruity hints of Williams pear and citrus. On the palate it is fresh, smooth and easy-drinking, with pleasant fruity echoes.

Ideal with aperitifs, light raw seafood, vegetarian finger food, herb and vegetable risottos, delicate seafood pastas, cold white meats, and steamed or en papillote fish.
