Description
Scaia Dea Rosso della Famiglia Castagnedi is a partially dealcoholized red wine, defined by a soft, fruity and pleasantly fresh style. Made from red grapes, it is conceived to offer an immediate and versatile sip, with particular attention to drinkability.
Vinification involves destemming the bunches and a light maceration at 7–8 °C for 24 hours. Alcoholic and malolactic fermentations take place at a controlled temperature of 22–23 °C in stainless steel; this is followed by gentle pressing with a pneumatic press, cold stabilization, and weekly bâtonnage until bottling. Maturation takes place entirely in stainless steel.
To the eye it shows an intense red color with purple highlights. The bouquet is distinctly fruity, with notes of cherry, morello cherry, plum, damson and wild berries. On the palate, the taste of morello cherry stands out, accompanied by a soft, full sip, balanced by a pleasant freshness.
It pairs well with traditional appetizers such as soppressa veneta and sweet prosciutto crudo, first courses with white ragù, mushroom risottos, baccalà alla vicentina, gnocco fritto and tigelle.
