Description
Sensoinverso Nero d'Avola from Abbazia Santa Anastasia is a red wine made from 100% Nero d'Avola grapes grown using biodynamic agriculture. The vineyards are located in Castelbuono at an altitude of 400 meters above sea level. Harvesting is done by hand to ensure the selection of the best grapes.
Traditional red wine vinification takes place in cement tanks, without the use of selected yeasts, enzymes, or fining agents, at a controlled temperature not exceeding 28°C. The wine is not filtered and has an almost negligible sulfur content. The process includes a 30-day maceration on the skins. The wine is aged for 12 months in oak barrels, followed by another 36 months in bottle.
This wine has a deep ruby red color with violet reflections. On the nose, it is fragrant and assertive, with aromas of raspberry, blackberry, cherry, and black mulberry, accompanied by floral notes of violet, rose, and orange blossom. Spices, including licorice, cinnamon, and mace flowers, enrich the bouquet. On the palate, this red wine is fresh, smooth, and enveloping.
Perfect paired with red meat, game, risotto, and aged cheeses.
