Description
I Sensi Syrah Il Tatto is a red wine from Abbazia Santa Anastasia, produced in Sicily from 100% Syrah grapes grown in the Madonie region at an altitude between 450 and 500 meters above sea level.
The red vinification process begins with crushing and destemming, followed by a light cryomaceration in cement vats, then alcoholic fermentation with frequent punch-downs and temperatures ranging from 22 to 28°C. The process includes at least one delestage per day and a further maceration on the skins for 15 days after fermentation. The wine is aged for about 6 months in vitrified cement tanks, followed by a brief period in large oak barrels for another 6 months, with an additional 6 months refinement in the bottle.
This wine has an intense, vibrant ruby color with almost violet highlights. On the nose, it offers a broad and generous fragrance with intense notes of wild red berries and a delicate bouquet of spices including nutmeg, white pepper, green cardamom, and vanilla. The palate is soft and enveloping, with sweet, silky tannins, great persistence, and a pronounced minerality that enhances the ripe fruit.
This Syrah pairs perfectly with grilled red meats and aged cheeses.
