Suavia’s Monte Carbonare is a Soave Classico made from 100% Garganega. It captures the essence of its birthplace, showcasing a bold, self-assured personality. It shows a bright straw-yellow color and an intense aromatic profile marked by pronounced minerality. This is a structured white that marries freshness and complexity in a single sip.
Where it comes from
The grapes come from the Carbonare area, characterized by deep, black volcanic soils that imprint a strong sense of place on the wine. The vines, trained to the pergola veronese, have an average age of around sixty years. This combination of volcanic ground and mature vineyards contributes to the wine’s concentration and depth. The specific origin from this area shapes the distinctive character of Monte Carbonare.
How it is made
Vinification takes place entirely in steel, with alcoholic fermentation lasting sixteen days at a controlled temperature between fourteen and sixteen degrees. The wine then ages for twelve months on its fine lees, still in steel tanks, before completing a further six months of bottle aging. Malolactic fermentation is not carried out, a choice that preserves the freshness and saline snap typical of Garganega. This production path enhances the native minerality of its terroir.
Tasting notes
On the eye it appears a bright straw-yellow. The nose opens with sulphurous and smoky notes, with hints of flint, citrus and wildflowers. The palate is creamy and elegant, with a vibrant freshness and pronounced salinity. The finish is dry and very persistent, leaving a lasting impression.
Food pairing
This wine is ideal with fish dishes, flavorful white meats and vegetable risottos, where its saline edge brings the seasoning into balance. It also pairs beautifully with truffle dishes, which highlight its smoky and mineral tones. It finds an excellent match with medium-aged cheeses that can stand up to its structure. Its versatility makes it suitable for an entire tasting menu.
