Terre di Chieti Pecorino by Tenuta Ulisse is an Abruzzese white wine made exclusively from Pecorino grapes. Classified under the Terre di Chieti denomination, it stands out for its soft and balanced style, marked by a well-defined aromatic profile. The winemaking process aims to extract the best aromatic compounds, offering a technically precise and clean white. Origin

This wine originates in Abruzzo, within the renowned Terre di Chieti denomination, a winegrowing area influenced by its proximity to both the mountains and the Adriatic coast. This unique climatic context helps to develop wines with a distinct and focused character. The grapes are selected from the estate’s finest vineyards, managed to achieve higher aromatic concentration and a rich palate that still maintains great drinkability.

Production method

The selected grapes are placed whole in a cooling tunnel and undergo cryo-maceration to optimize aroma extraction. After being destemmed, they are pressed in an inert environment before static cold clarification. Alcoholic fermentation takes place at a controlled temperature of 11°C in thermo-regulated, inert tanks, a choice that perfectly preserves the integrity and cleanliness of the must. The process finishes with aging in stainless steel, essential to maintain the grape’s varietal character.

Tasting notes

In the glass, the wine shows a straw-yellow color with greenish hues, reflecting its refined stainless steel maturation. On the nose, it opens with clear aromas of ripe fruit, led by pronounced notes of pineapple and white peach, harmonized by delicate touches of aromatic herbs. On the palate, it is smooth and rich, upheld by a pleasant sense of balance, with a finish that mirrors the fruit-forward character perceived on the nose.

Food pairings

Its natural smoothness and aromatic profile make it ideal with light appetizers and fish-based dishes.
