Description

This Pecorino is a Premium edition of Tenuta Ulisse, that is a selection of grapes from the best vineyards.

The selected grapes are placed whole in the cooling tunnel and undergo cryomaceration for the extraction of aromatic compounds. The grapes are then de-stemmed and pressed in an inert environment, to then undergo a static cold clarification. Fermentation takes place at a controlled temperature of 11 ° C in thermoregulated and inertized tanks, and then aged in steel.

Straw yellow with greenish hues, it opens on the nose with aromas of ripe fruit, pineapple and white peach, with hints of aromatic herbs. The sip is soft, rich and balanced.

Ideal in combination with light appetizers, first and second courses based on fish and white meats.
