Description
The Sangiovese Vigna Polissena from the Il Borro estate is born in vineyards located on the hills of the Valdarno area in Tuscany, at the foot of Pratomagno. It is produced exclusively with Sangiovese grapes, harvested and sorted entirely by hand.
The grapes are left to macerate on the skins for 22 days in stainless steel tanks at a controlled temperature of 28°C, and the alcoholic fermentation lasts about 10 days. The wine is then placed in second-pass Allier oak barrels, where it rests for 12 months and undergoes malolactic fermentation. Afterwards, it is transferred to steel tanks for 30 days, then filtered and bottled. Before being marketed, it rests in the cellar for another 6 months.
It is a wine with an intense ruby red color. The bouquet is rich and bold, with pleasant notes of undergrowth and hints of red berries. On the palate, it is dry and has a good body, with present but pleasant tannins.
Perfect for accompanying red meats, cured meats, and aged cheeses, it is excellent paired with game dishes. Particularly recommended with hare, wild boar, Chianina, and Cinta Senese.
