Description
What kind of wine it is
Giulio Ferrari Riserva del Fondatore by Ferrari is an Extra Brut sparkling wine produced in Trentino. Classified as Trento, this wine maximizes the potential of Chardonnay through an elegant profile and remarkable finesse. Vinification follows the Traditional Method with bottle fermentation and an exceptionally long aging on the lees, which gives the style a profound complexity and extraordinary persistence. The velvety texture and precise aromatic register perfectly reflect the care taken in the cellar.
Where it comes from
This wine originates from the renowned Maso Pianizza vineyard, located on the slopes that surround the hills of Trento. This natural amphitheater ensures optimal climatic conditions for aromatic grape development. The origin is inseparably linked to this single production site, which imparts an unmistakable mark on the fruit. The characteristics of the mountain soil and altitude define a character based on precision and expressive intensity, essential for supporting long maturation.
How it is produced
The production process begins with hand-harvesting the best grape clusters toward mid-September. After creating the base wine, bottle refermentation following the Traditional Method introduces the most distinctive phase of vinification. The wine rests in the cellar for a period of ten years in close contact with the lees, allowing it to develop a rich sensorial depth. This prolonged aging bestows the sparkling wine with a silky consistency and elegant evolution, integrating the original nuances of the grape with refined mature notes.
Tasting notes
In the glass, it shows a brilliant straw yellow color highlighted by bright golden reflections. The olfactory profile delivers an ethereal and complex bouquet, where the typical fruity aromas of Chardonnay blend with hints of honey, vanilla, and white chocolate. On the palate, it is harmonious and envelops the mouth with a pleasantly velvety body. The notably persistent finish rounds off the tasting experience with inviting hints of hay and acacia honey, ensuring consistent aromas.
Food pairings
Its articulated and elegant structure makes it an ideal companion for refined appetizers and seafood-based first courses. It pairs precisely with fish and crustacean dishes, where the sapidity and balance of the sip enhance the delicacy of seafood. The intensity of its aromatic profile accompanies structured recipes successfully, never overpowering the flavors of the dish. Particularly spot-on is the pairing with spaghetti alle vongole, where the wine's softness skilfully balances the savoury notes of the preparation.
When to serve it
This label is ideal for accompanying special lunches and dinners, as it ensures impeccable service from the appetizer to main seafood courses. The long lees aging demands that it be enjoyed in contexts where its aromatic evolution and enveloping texture can be fully appreciated. It gives its best when you want to offer a harmonious and persistent sip at the table, capable of evolving in the glass throughout the meal. An excellent wine to crown important occasions with a distinctive and memorable style.
