Description
What Kind of Wine It Is
Ferrari’s Perlè Zero is a white Metodo Classico Dosage Zero wine made from Chardonnay grapes grown in mountain vineyards of Trentino. It originates from a meticulous blend of several vintages, assembled to achieve a dry, elegant profile with great aromatic precision. The vinification begins with an initial period in steel vats to enhance freshness and clarity, followed by time in wood to impart structure. The absence of dosage accentuates the pronounced sapidity and the genuine expression that Chardonnay can deliver in this unique microclimate.
Where It Comes From
This Trento is brought to life in the high-altitude vineyards cared for by the Lunelli family, nestled along the slopes of Trentino’s mountains. The alpine environment, characterized by wide temperature swings and constant breezes, favors slow ripening and robust acidity retention, both fundamental elements in defining the wine’s taut style. The slopes and mountain soils yield concentrated fruit, capable of conveying an unmistakable territorial identity in the glass, based on a perfect balance between freshness and gustatory precision.
How It Is Produced
The cuvée is based on a blend of different vintages of Chardonnay, processed through an elaborate aging path to build deep complexity. After vinification in steel, highlighting fruity aromas, the wine rests in wooden barrels to enrich its body. The prise de mousse follows the rules of the Metodo Classico and concludes with six years of bottle aging on the lees. The meticulous final blending and Dosage Zero ensure a linear, essential sip untouched by sweetness.
Tasting Notes
It appears a bright straw yellow in the glass, streaked with vivid golden hues. On the nose, it impresses with clean, razor-sharp aromas, dominated by fresh notes of grapefruit and ginger root, enriched with shades of pineapple, aromatic herbs, and cumin. On the palate, it is dry and savory, with an enveloping entry that gradually gives way to remarkable depth. The finish is persistent and perfectly consistent with the aromatic profile, driven by the vibrant taste tension typical of non-dosed wines.
Food Pairings
Ideal as an aperitif, it effortlessly accompanies seafood dishes, where mineral notes balance the more delicate textures. It excels with sushi and shellfish, enhancing both raw preparations and recipes marked by a pronounced saline tendency. At the table, it harmonizes superbly with seafood first courses, such as seafood risotto, or local specialties, like baked trout, supporting the structure of the meal without weighing down the palate.
When to Serve
Perfect for convivial moments, when you want to accompany a whole menu with a rigorous, sharp Metodo Classico. Its complex framework, forged over long years on the lees, makes it ideal for enhancing refined, flavorful dishes. It is the top choice for those seeking an authentic tasting experience, able to convey the true soul of Chardonnay in its most pure and essential form, without filters.
