Maximum Demi-Sec by Ferrari is a sparkling wine produced in Trentino that demonstrates the precision of the Traditional Method. Made from Chardonnay, it stands out for its balanced and enveloping style. The prolonged aging on the lees shapes a continuous aromatic profile, characterized by elegant fresh fruit notes and a pleasant softness.

Where it comes from

It is brought to life within the Ferrari estate from grapes grown in vineyards scattered between the Val d’Adige, Val di Cembra, and Valle dei Laghi. The soils of these different municipalities, which fall under the Trento designation, make it possible to obtain ideal base wines for harmonious ripening. The selection of vineyard plots faithfully reflects the vocation of the Trentino territory.

How it's made

Harvesting is done by hand in the first half of September. The winemaking process follows the Traditional Method, with secondary fermentation taking place in the bottle. This is followed by at least 36 months of aging on the lees, using yeasts selected directly from the estate’s own cultures, a step that offers great finesse and a texture consistent with the Demi-Sec style.

Tasting notes

To the eye, it presents a bright straw yellow colour. The nose reveals a delicate aromatic bouquet where fresh fruit intertwines with typical aromas of bread crust and hazelnut. On the palate, it is harmonious, delivering persistent fruity notes complemented by intriguing vanilla sensations and clear memories of yeast that linger long.
