Description
What kind of wine it is
Roveto is a red wine from the Terra estate, made entirely from Cabernet Sauvignon grapes. It comes across as a characterful red, conceived to grace the table with a fruity profile and a smooth, easy-drinking palate. Its style reflects careful work in the vineyard and the cellar, aimed at preserving the grape’s aromatic freshness. It is a wine suited both to everyday enjoyment and to more structured social occasions.
Where it comes from
The grapes come from a vineyard of about four hectares located in the area of Todi, in Umbria, at an altitude of around three hundred meters above sea level. The southern exposure and predominantly galestro soils encourage steady ripening. The vines, trained to spur-pruned cordon with a dense planting layout, are between fifteen and twenty years old. This pedoclimatic context gives the wine its territorial identity.
How it is made
Harvest generally takes place in mid-September, depending on the season. After picking, the Cabernet Sauvignon grapes undergo maceration on the skins for about fourteen days to extract color and structure. Alcoholic fermentation occurs at a controlled temperature in stainless steel to keep varietal aromas intact. This is followed by aging for eight to twelve months in stainless steel and a further six to eight months in bottle, before bottling between May and June.
Tasting notes
In appearance, the wine shows an intense, bright ruby red color. On the nose, the bouquet is lively and generous, with distinctive notes of cherry and blackcurrant, accompanied by hints of wild berries. On the palate it is balanced and supple, with a rounded sip that confirms the fruit-forward sensations perceived on the nose. The finish remains aromatically consistent with a pleasing roundness.
Food pairings
This wine pairs well with flavorful first courses and meat dishes that are not overly fatty. It also makes a good match with grilled meats and game, where its supple structure balances bold flavors. It is also suited to accompany medium-aged cheeses, able to engage with the wine’s fruity notes. A versatile choice for rustic, convivial meals.
When to serve it
It lends itself well to autumn and winter gatherings, paired with hearty dishes from Umbrian cuisine. The ideal service calls for long-stemmed glasses with a generous bowl, which favor its aromatic expression. A fitting choice to accompany the whole meal, from flavorful first courses through to cheeses.
