Valpolicella Classico Biologico by Domini Veneti is a red wine that embodies the spirit of the region. The grapes, from organic practices, are vinified to highlight the fruit. Ageing in stainless steel preserves the aroma for a glass with a direct character, supported by well-integrated tannins and a medium-long finish.

Where does it come from

The grapes come from Valpolicella Classica, from vineyards perched on the elevated hills of the area. The vines are planted on dry stone terraces at an altitude between 150 and 450 meters. The predominantly silty-clay soils provide the plants with the right conditions to develop precise aromas, ensuring a balanced flavor profile with distinct freshness.

How is it made

Harvesting is done by hand-picking towards the end of September to ensure careful selection of the bunches. Once in the winery, the destemmed grapes begin fermentation at 25-28 °C to safeguard the original expression. A short maceration of seven days extracts the color. The wine then matures in stainless steel to enhance aromatic clarity and vibrancy.

Tasting notes

In the glass it appears ruby red with lively violet highlights. The nose displays clear notes of red fruits, pepper, and sweet spices, with delicate hints of rose and violet. On the palate it is warm and direct, offering a medium body sustained by a pronounced acidity. The tannins are well balanced, leading to a consistent finish with good length.
