Description
What type of wine it is
The Valpolicella Ripasso La Casetta di Domini Veneti is a dry red wine with a deep ruby red color and violet hues. It is the result of the ripasso technique, which gives the wine concentration and richness without losing balance. The profile is full-bodied and generous, with a velvety, highly enjoyable sip.
Where it comes from
The grapes come from the Valpolicella Classica, in the valley of Negrar, where Domini Veneti cultivates vineyards between 230 and 450 meters above sea level. The vineyards face southwest and grow on varied soils, predominantly clays with nummulitic limestone sections. The vines are trained to a double pergola and are about fifteen years old.
How it is made
The wine is made from Corvina, Corvinone and Rondinella, harvested between late September and early October with manual selection. After gentle pressing with destemming, fermentation takes place at controlled temperature with a twelve-day maceration and scheduled punch-downs. The wine rests in stainless steel until February and then undergoes ripasso on the Recioto pomace, in contact for fifteen days with daily punch-downs. After malolactic fermentation, the wine matures in wood and stainless steel and refines in bottle.
Tasting notes
The bouquet is intense and refined, with hints of cherry and spices. On the palate it is warm and full-bodied, full and velvety, with notes of dried fruit. The richness of the ripasso comes through in a concentrated yet balanced sip.
What to pair it with
It pairs with all types of red meat, to which it offers structure and silkiness. It goes well with game and aged cheeses, where its richness stands up to the persistence of the flavors.
When to serve it
It is a red suited to autumn and winter dinners and convivial meals based on meat. Serve it in a large glass that allows the cherry and spice aromas to open up. It can be opened ahead of time to let the wine’s intense character relax.
