Description

What type of wine is it

Veneto Rosso Leggero Appassimento by Dal Moro is a red wine produced from the Corvina Veronese, Corvinone, and Rondinella grape varieties. The production technique involves a drying of the grapes for sixty days, aimed at increasing sugar concentration and aromatic intensity. This label stands out for its full-bodied and enveloping style, capable of delivering a rich aromatic profile and pronounced smoothness on the palate.

Where does it come from

The grapes used for the production of this wine come from the hilly area around Verona, in Veneto. The vineyards, with vines averaging between twenty and twenty-five years old, are situated at an altitude ranging from one hundred to three hundred and fifty meters above sea level. The clay and limestone soils foster even ripening and provide the final product with notable structure and a distinct sense of place.

How is it produced

Harvesting takes place towards the end of September with a rigorous manual selection of bunches. After the drying phase, the process includes fermentation at a controlled temperature and ten days of maceration on the skins, which helps extract just the right amount of color and phenolic compounds. Once malolactic fermentation is complete, the wine undergoes aging in barrels, which contributes to developing solid structure and balance.

Tasting notes

To the eye, the wine shows a ruby red color, enhanced by delicate, evolved nuances. The bouquet delivers intense aromas with clear notes of cherry and vanilla, supported by hints of sweet spices. On the palate, it enters harmoniously, characterized by a velvety texture and a full body. The tasting experience concludes with a lingering finish, offering a pleasant and long-lasting spicy aftertaste.

Food pairings

At the table, this red is a perfect companion for main courses based on red meat. Its smooth texture and good aromatic concentration make it particularly suitable alongside grilled meats and braised beef, enhancing the vanilla and spice notes. It is also an excellent match when served with a selection of aged cheeses, thanks to a flavor profile that easily cleanses the palate.

When to serve it

It is a suitable choice for shared meals at the table, ideal for dinners featuring rich and flavorful dishes. It expresses itself best during the cooler months, as it highlights the fullness and roundness achieved through the drying technique. To fully enjoy its aromatic complexity and harmony, allow for moderate aeration in the glass just moments before serving.
