Description
What kind of wine is it
Dal Moro's Appassimento is a red wine made from native Veronese grapes: Corvina Veronese, Corvinone, Rondinella and other complementary varieties. It has a ruby color and a full, velvety style, with a concentration that comes from the appassimento of the grapes.
Where it comes from
The grapes come from the Veronese hillside area, at an altitude between 100 and 350 meters above sea level. The soils are predominantly clay, with some limestone. The vines are 20-25 years old.
How it is made
The bunches are harvested toward the end of September with manual selection. The grapes then rest for 60 days in appassimento, to obtain a greater concentration of sugars and aromatic compounds. Fermentation follows with a 10-day maceration. Once malolactic fermentation is complete, the wine ages in wood.
Tasting notes
In appearance it is a beautiful ruby red with more evolved nuances. On the nose it offers complex aromas, highlighted by cherry and vanilla. On the palate it is harmonious, full and velvety, with a long finish on spicy tones.
Food pairings
Pairs with red meat mains, grilled meat and braised dishes. It goes well with all aged cheeses.
When to serve it
It is a red for special lunches and dinners, when rich, flavorful dishes are on the table. A large-bowled glass enhances its aromas, and it’s best to open the bottle a little in advance.
