Description

The Pràgal wine of Tenuta Santa Maria comes from classic Valpolicella vineyards, located in Novare di Negrar and in Val d'Illasi, east of Verona.

The Merlot and Syrah grapes are harvested in the second half of September once they have reached the perfect degree of ripeness. In the cellar the must of these varieties ferments in stainless steel with temperature control, after which the malolactic fermentation is completed. From October we proceed with the harvesting of Corvina Veronese, partially dried in the fruit cellar and vinified with maceration for 20-30 days. Followed by aging in oak barrels and a small percentage in barrique. After 6-7 months, the three varieties are assembled and further refined in the bottle.

It appears in the glass with a concentrated ruby red dress with soft purple hues. On the nose it enchants with its aromas of red fruit jam, dried rose and morello cherry that mix with more complex notes of tobacco and black pepper. In the mouth it is enveloping, warm and soft, with soft tannins that harmonize its structure and guide its final persistence.

It goes perfectly with meat carpaccio, first courses and medium-aged cheeses.
