Description
The Vin Santo del Chianti from Fattoria dei Barbi is a sweet wine symbolizing hospitality and Tuscan tradition. Produced since 1870, the winery has one of the most complete and prestigious collections of Vin Santo in Tuscany and the world. Its production is limited due to low yields and the complexity of the winemaking process.
Made from Trebbiano, Malvasia, and Sangiovese, the grapes are left to dry on racks until December, achieving a high concentration of sugars. After gentle pressing, the must is transferred to small oak barrels, where it ferments and ages slowly in contact with the "mother," the rich yeast residue from previous productions, developing its characteristic aromatic profile.
With an amber-yellow color, on the nose it offers a complex bouquet with notes of raisins, candied fruit, and nuts, accompanied by a delicate fragrance of chestnut honey. On the palate, it is harmonious and velvety, with sweetness balanced by the warmth of alcohol and a long, enveloping finish.
Perfect with classic Tuscan cantucci and dry pastries, it also pairs well with aged hard cheeses and liver pâté when tasted colder.
