Description

What type of wine it is

The Metodo Classico Brut Christian Bellei by Cantina della Volta is a quality white sparkling wine with a golden, brilliant color. Its style is that of a long-matured sparkling wine, with well-integrated acidity, precise fruit and a saline finish. It’s a fitting choice for those seeking a characterful Emilian Metodo Classico.

Where it comes from

The grapes are hand-harvested from soils near the Secchia River, in Emilia-Romagna. Harvest takes place in the last week of September, when the grapes retain the freshness needed for a sparkling base wine. The wine comes from a selection of clusters and is vinified without blending.

How it is made

After gentle pressing, only the free-run must is used, which is clarified and fermented in stainless-steel tanks at controlled temperature. With the secondary fermentation in bottle, the wine ages on the lees for at least six years, a very long time for a traditional-method wine. Disgorgement follows with the addition of the liqueur d'expédition.

Tasting notes

The color is golden and brilliant. On the nose, floral and fruity notes of chamomile, violet, white currant and lime prevail. The palate is supported by a lovely acidic backbone, enriched by raspberry, redcurrant, lemon peel and rosehip. The finish reveals a delicate salinity.

Food pairings

Ideal as an aperitif, it pairs well with seafood appetizers, shellfish and Emilian cured meats such as prosciutto crudo. It also works with fresh cheeses and light fried dishes. The acidity and salinity help cleanse the palate.

When to serve it

A sparkling wine for special toasts, for an elegant aperitif or to open a seafood dinner. A fine gift idea for those who appreciate Italian traditional-method wines.
