Description
What kind of wine is it
The Volnay 1er Cru Les Caillerets from La Pousse d’Or is a red wine from Burgundy. Made from Pinot Noir grapes sourced from the En Caillerets parcel, it presents a broad, structured profile with notable density. The winery favors fermentation with indigenous yeasts and resting on fine lees in oak barrels, to preserve the integrity of the raw material and avoid filtration and fining.
Where it comes from
The vineyards lie in the heart of the Côte de Beaune, where the soil stands out for its high content of calcareous marl and clay. The vines benefit from an east-facing exposure at mid-slope, a position that ensures proper drainage and even ripening. Farming follows the principles of biodynamic viticulture and forgoes insecticides to enhance the authentic imprint of the terroir.
How it is made
Hand harvesting kicks off a meticulous process marked by careful selection and the destemming of the berries. The must undergoes a week of cold maceration to gradually extract the aromatic components before fermentation starts in the tanks. Aging continues for at least fifteen months in oak barrels in contact with the fine lees, naturally shaping the structure.
Tasting notes
In the glass it shows a limpid ruby red hue, introducing an aromatic frame where lively red-fruit notes meld with delicate herbal nuances. Time in wood enriches the profile with well-judged notes of vanilla. On the palate it is dense and deep, delivering a sense of steady progression that fades into a clean finish true to its long aging.
What it pairs with
Its concentration makes it suitable to accompany hearty first courses and rich preparations. It pairs with red and white meats as well as game, enhancing their flavor thanks to its dense texture. Regionally, it serves as the perfect accompaniment to French classics, supporting the succulence of boeuf bourguignon and the spicy nuances of coq au vin.
When to serve it
Its complex profile is the right choice for convivial dinners, where dishes call for solid balance in the glass. The absence of filtration and the careful cellar work deliver a sip of vibrant expressiveness that can stand up to bold flavors. It’s a bottle to open when you want a defined structure, able to offer aromatic freshness and complement rich meats.
