Chocolate - The pairings for the Easter egg

Chocolate eggs are the element that absolutely cannot be missing from Easter tables. But what to pair chocolate with? The key element for a successful pairing is the amount of cocoa in the chocolate. Milk chocolate pairs well with fortified wines like Passito di Pantelleria, Marsala, Sherry, or Port. Dark chocolate, like bittersweet chocolate, can be paired with spirits, but also with soft, well-structured, and "meditative" red wines. Great Cabernet Sauvignons, Sagrantino di Montefalco, Amarone, Primitivo di Manduria, Barolo Chinato, or Agricanto, the liqueur based on Raboso by Paladin, are particularly suitable for this type of pairing. One of the most successful pairings is undoubtedly with Rum, which favors dark chocolate, following the rule that longer aging requires a higher percentage of cocoa. Grappa and chocolate enhance each other and offer an equally satisfying experience if you let a piece of chocolate melt in your mouth after a sip of the spirit.

Pairing wine and chocolate can be difficult, but it's not impossible; it's all about finding the most harmonious combination. One must definitely consider the amount of cocoa in the chocolate, so alongside an intense and bold dark chocolate, we recommend pairing it with a sweet wine, such as Agricanto di Paladin, Barolo Chinato Il Diavolo Sulle Colline by Vite Colte, or Marsala Superiore Riserva 10 Years by Marco de Bartoli. On the other hand, when it comes to milk chocolate, which is more delicate and certainly less aromatic, the ideal pairing would be a Recioto della Valpolicella, such as Recioto Angelorum by Masi or Recioto di Bolla.
