What are the differences for Extra Brut and Pas Dosé Champagnes? In sparkling wines we talk about dosage, referring to how much sugar is added during the sparkling phase. If the final sugar residue of the wine does not exceed 6 grams per liter of wine , the sparkling wine can be labeled as Extra Brut , while if the quantity is less than 3 g/l , it can be called Pas Dosé, Dosaggio Zero or Nature ).

The label responsible for the rediscovery of this style is Laurent-Perrier's "Ultra Brut" Champagne, which was revived by Bernard de Nonancourt in 1981 inspired by the cuvée launched in 1889 by Mathilde-Emilie Perrier and which for almost a century it was simply called "Grand Vin Sans Sucre". The presence of a growing number of low-dose labels even among Charmat method sparkling wines testifies to the great success achieved by this style over the years.

Extra Brut and Pas Dosé tend to enhance freshness without altering the original characteristics of the sparkling wine: for this reason they are among the most appreciated by connoisseurs . Excellent as an aperitif , this type of sparkling wine pairs well with fatty fish such as salmon and eel, and pairs divinely with shellfish and fried fish .
