An Extra Brut sparkling wine, whether a Metodo Classico, a Metodo Charmat, a Prosecco or a Champagne, contains no more than 6 grams of sugar per litre. In the dosage classification, therefore, Extra Brut is immediately above non-dosed sparkling wines, known as Nature, Pas dosé or Dosage Zero, which contain, on the other hand, less than 3 grams per litre understood as natural, non-added residual sugar. In both cases, these are therefore particularly dry and generally less fruity bubbles in which a note of acidity and freshness prevails.

These sparkling wines are perfect with sushi, oysters, shellfish and fish crudités, light fried foods, fatty fish, fresh and milky cheeses such as mozzarella and prosciutto crudo.
