Landgoed Notte Rossa, hanteert een productiefilosofie die gericht is op de opwaardering van de inheemse variëteiten van Apulië en presteert het om met iconische wijnen het allerhoogste te bereiken, in verschillende versies van de jongste tot de prestigieuze Riserva's. De rode wijnen, bijvoorbeeld, zijn een volle, evenwichtige rood met pruimachtige, naar kersen geurende tonen.

Een voorbeeld hiervan zijn de rode wijnen, zoals de Salento Primitivo (94 ptn Maroni), een volle en evenwichtige rode met hints van pruimen en kersen, maar ook de Rosso Salento IGT Bascià (94 ptn Maroni), ideaal bij hartige voorgerechten en rood vlees. Ook de volle Primitivo di Manduria Riserva, waarvan de hints van pruimen en jam evolueren naar zoethout en tabak dankzij de 18 maanden rijping op hout. Vergeet ook de witte wijnen niet, zoals de knapperige en fruitige Salento Fiano, ideaal bij voorgerechten met gemengde zeevruchten en schelpdieren.
