What kind of wine is it?
Amarone della Valpolicella Classico Riserva La Mattonara by Zýmè is a red wine from Veneto, made from Corvina, Corvinone, Rondinella, Oseleta, and Croatina grapes selected from the oldest vineyards on the estate. Its profile is full and structured, with a mature and complex expression and already-evolved tannins, shaped by drying and long maturation in oak.
Where does it come from?
Zýmè is located in San Pietro in Cariano, on the hills of the Valpolicella region, with an estate stretching over about 30 hectares. The La Mattonara grapes come from parcels with older vines between Negrar and Sant’Ambrogio in the Classic Valpolicella area. The calcareous soils and mild, breezy climate favour the ripening of the local red grapes.
How is it produced?
La Mattonara begins with a selection of bunches destined for about three months of drying in the fruttaio. This is followed by fermentation using indigenous yeasts and a long maceration on the skins, which extracts colour, structure, and aromatic components. The wine matures for nine years in oak barrels and tonneaux, and completes its refinement with an additional period in the bottle.
Tasting notes
In the glass, it shows an intense and deep red colour. The bouquet is rich, with spicy notes and hints of blackcurrant jam, along with ripe cherry, plum, and morello cherry. The taste is dense and mature, with soft and evolved tannins; the finish is harmonious and very persistent.
Food pairings
At the table, it pairs well with slow-cooked and flavourful dishes. It is ideal with braised meats and game, where the structure and maturity of the wine stand up to the texture and intensity of the fare. Its persistence and spiciness blend well with rich sauces and gravies.
When to serve it
It is the right choice when you want a red wine with great structure and complexity, perfect for lunches and dinners featuring dishes that demand a long-aged wine. The long ageing in oak and bottle offer a complete drinking experience, with already-evolved tannins and a persistent finish.
