Description
Precious and pure expression of Valpolicella, the Amarone Villa Annaberta from Cottini is born from the classic and traditional blend of Corvina, Corvinone, and Rondinella grapes, rigorously hand-picked in the second week of September.
The grapes rest in fruit lofts during the winter, on the arele, the typical bamboo trellises where they undergo the drying process: they become smaller and acquire a significant sugar concentration. After drying, the grapes are destemmed and crushed. Fermentation takes place in stainless steel tanks with an initial maceration phase at approximately 2-5°C. This is followed by alcoholic fermentation lasting about 20 days at a controlled temperature of 20-24°C. Aging occurs in barriques, tonneaux, and lasts about 20 months. After a careful examination, the blend is subsequently made in steel.
With an intense red color, the aroma offers the nose the typical scents of cherry, blackberry, and spicy notes. A full-bodied wine, revealing itself on the palate fruity, meaty, lively, round, and soft, with evolved tannins and a robust structure.
It excellently accompanies red meats, grilled or roasted. Excellent with tasty and substantial first courses and with risottos. Perfect with aged cheeses.
