Description
Boroli's Barolo Cerequio is produced in the municipality of Barolo, made from Nebbiolo grapes coming from the Cerequio vineyard located at about 350 meters above sea level. The clay soils with blue marl, limestone, and sandy components give the wine elegance, minerality, and great aging potential.
Vinification foresees separate processing of the different plots, fermentation in steel at a controlled temperature, and extended maceration with submerged cap. After malolactic fermentation, the wine ages in large oak barrels and subsequently in the bottle, developing depth and aromatic complexity.
It shows a bright red color with faint coppery hues. The nose stands out for a complex profile with notes of black cherry, dried rose, eucalyptus, and forest floor. On the palate, a pronounced minerality emerges, accompanied by balsamic and spicy notes, with an elegant and persistent structure.
It pairs perfectly with structured dishes such as braised meats, game, and aged cheeses.
