How it is made
Vinification starts with a fermentation in stainless steel that lasts for about a month, allowing for the gradual extraction of structure and aromatic components from the Nebbiolo. Subsequently, the wine undergoes a long maturation period of about thirty months. This aging takes place partly in barriques and partly in large oak casks, a choice aimed at integrating the tannins and building solid complexity.
