Description
The Bianco di Torgiano Figlio della Luna by Tenute Baldo is born from the union of Trebbiano, Chardonnay, and Sauvignon Blanc, grape varieties that blend into a perfect balance of freshness and structure. The choice to harvest at night allows for the best preservation of the aromatic characteristics of the grapes, giving the wine a distinct expressiveness and liveliness.
The grapes, harvested at different stages of ripeness, are carefully selected before undergoing a gentle pressing. Fermentation takes place in temperature-controlled stainless steel tanks for about ten days, in an oxygen-free environment to maintain the purity of the aromas. Subsequently, the wine ages for five months on noble lees, developing complexity and depth, and then completes its journey with a brief bottle aging.
With a pale yellow color and golden reflections, it stands out for its wide and varied bouquet, ranging from white-fleshed fruits such as apple and banana to exotic notes of pineapple and citrus. Floral notes of jasmine intertwine with delicate hints of honey and wildflowers. On the palate, it is enveloping and round, with vibrant freshness and well-integrated salinity that provide balance and persistence.
It pairs elegantly with fish dishes, shellfish, and fresh cheeses.
