Description
Valtuille El Rapolao is a red wine from one of the most emblematic parcels of Bierzo, located in an area rich in clay, organic matter, and iron. The area of El Rapolao is now considered the symbol of the future of zoning in the denomination, and the resulting wine is the purest expression of the character of this paraje. The vines, over 100 years old, offer very low yields but of high quality.
The harvest is manual and takes place in the early days of picking. 30% of the grapes are left whole and vinified in large barrels. Fermentation is spontaneous, with no temperature control, and maceration lasts about 45 days, with the cap being wetted by gravity. After racking, the wine rests and is then aged for a year in used barrels.
On the nose, one perceives intense aromas of ripe cherry, spices, graphite, and damp earth. On the palate, it is full, savory, and deep, with well-integrated tannins and a mineral trail that extends the finish, making it elegant and persistent.
Try it with grilled meats, stews, or flavorful game dishes.
