Description
What kind of wine it is
Pomona by Villa Poggio Salvi is a Brunello di Montalcino made from Sangiovese Grosso. This cru is born from a careful parcel selection by the winery, designed to define an authentic and distinctive style. Fermentation in steel and a long period of aging in wood shape a structured and complex red wine, destined for prolonged evolution. Its profile harmoniously blends fruit and spice sensations with an elegant tannic structure, delivering a precise and satisfying territorial identity.
Where it comes from
The vineyard is located in Montalcino, at an altitude of 450 meters with a southwest exposure. The vines thrive on galestro soils with a broad texture, essential to support the pronounced structure and flavor retention of the wine. Altitude and microclimate dictate a well-balanced rate of ripening, a factor that defines the grape’s exceptional aromatic precision. Through targeted parcel selection, this cru consistently and faithfully reflects the geological peculiarities and the clearest expression of the territory.
How it's made
The winemaking process begins with a cold pre-maceration for optimal aromatic extraction, followed by fermentation in steel supported by automatic piston punch-downs. Maturation takes place for thirty months in Slavonian oak barrels, a key step to define the tannic texture and integrate the soft spicy notes. A final rest in bottle for at least four months ensures total cohesion and stabilization of the sensory profile.
Tasting notes
In the glass, it displays a clear, bright ruby red hue, with transparency in line with aging in large barrels. The nose is broad and harmonious, marked by intense notes of red fruit and well-defined spices. On the palate, it is enveloping and complex, skillfully balancing structure and gustatory dynamism. The elegant and measured tannins support a persistent and deep finish, reflecting the solidity of the sip and a clear aging potential.
Food pairings
The dense structure of this red wine accompanies dishes where succulent proteins require support. It pairs perfectly with traditional grilled meats and classics from the region such as hearty pappardelle with wild boar. The hint of spice gives momentum to slow-cooked game dishes and balances the intensity of aged cheeses. Moreover, aging in wood creates a deep synergy with refined truffle-based dishes.
When to serve it
Structure and complexity make this bottle perfect for important dinners or for a meticulous dedicated tasting. The refined tannic expression and its aptitude for evolution recommend serving it in the colder months, when pairing with robust dishes is particularly harmonious. Although it offers great balance in its youth, its solid foundations guarantee an excellent cellar evolution and promise an intense taste persistence over the years.
