Description
Vulcanus Maceración Carbónica by Encomienda de Cervera is a red wine produced with Syrah grapes grown in the volcanic region of the Campo de Calatrava Massif, in Almagro, Spain. The volcanic and clay-rich soil gives the wine a strong territorial identity, enhanced by careful and environmentally friendly processing. It is an authentic expression of the terroir, combining the energy of the volcanic land with the finesse of artisanal winemaking.
Vinification follows the traditional carbonic maceration method, a technique now rarely used, which involves fermenting whole grape clusters in concrete vats. This approach, together with the manual harvesting of the grapes, enhances the varietal aromas and the freshness of the fruit, while preserving a good structure and aromatic complexity.
In the glass, it displays a cherry-red color of medium intensity with vivid violet highlights. On the nose, it offers great aromatic intensity, dominated by fruity notes of ripe strawberry and currant, accompanied by elegant floral hints of rose and blue flowers. On the palate, it is fleshy and balanced, with ripe tannins and a silky texture, finishing with a long, fruity finish that leaves a pleasant persistence.
Ideal paired with fresh cheeses, elaborate salads, and vegetable-based stewed dishes.
