Description
Codorn EDu Clásico Brut is a traditional cava produced in the D.O. Cava with the native varieties Macabeo, Xarel·lo, and Parellada, which constitute the classic blend of this historic Spanish sparkling wine. The grapes come from the most Mediterranean areas of the designation, where these varieties best express their typical character thanks to favorable climatic conditions and a viticulture focused on quality.
The winemaking process involves harvesting the grapes at the ideal stage of ripeness, followed by destemming and pressing to obtain the must. Fermentation takes place at a controlled temperature with selected yeasts; the wines are then blended and bottled with the liqueur de tirage to begin the second fermentation using the traditional method. The bottles are then aged on the lees in underground cellars for an extended period, developing finesse and complexity before disgorgement and the addition of the liqueur d’expédition that determines the final dosage.
In the glass it appears a very pale straw yellow with a fine and elegant perlage. The nose reveals fruity aromas typical of the traditional cava varieties, while on the palate it is fresh, balanced, and pleasantly harmonious.
Perfect as an aperitif or paired with dried fruit, savory pies, and assortments of canapés.
