Description
This Champagne from Chartogne-Taillet, sourced from the "Les Couarres" lieu-dit located in Merfy, is characterized by particularly rich clay and tuff soils capable of retaining moisture, with a predominant southern and southeastern exposure. This unique terroir, among the least draining in the area, imparts a strong identity to the wine, with balanced ripening of Pinot Noir and Chardonnay grapes cultivated with respect for the environment and the natural equilibrium of the vineyard.
Vinification and ageing require great care to avoid excessive oxidation, favoring meticulous work right from the pressing. Ageing takes place in used barrels, kept in humid environments to limit evaporation and preserve the body, with regular topping up to protect the wine from air contact and encourage slow and harmonious development.
On appearance, it is clear and bright, often with golden highlights. The nose reveals a complex personality that evolves over time, while on the palate it stands out for its enveloping, "spherical" texture, supported by balanced freshness and a mineral sensation that ranges between taut and more stony notes, with an elegant and persistent finish.
It pairs perfectly with fish dishes, shellfish, delicate white meats, and preparations that enhance its structure and finesse.
