Description

What kind of wine is it?

Champagne Pas Dosé L’Instant B by Bolieu is made from Chardonnay grapes from the Côte des Blancs. This non-dosage Champagne presents a dry, clean profile, with vibrant acidity that delivers freshness and a creamy texture. The mousse takes shape using the Champenoise Method, and extended aging on the lees supports its structure and aromatic complexity. Perfect for those seeking a bold character, with a savory and clean finish.

Where does it come from?

The grapes are sourced from the Côte des Blancs, a historic region of Champagne renowned for Chardonnay thanks to its chalky, well-drained soils. The cool, ocean-influenced climate leads to slow ripening, preserving acidity and primary aromas. Vines over 45 years old yield low quantities but greater concentration, imparting finesse and sharpness typical of this region’s whites.

How is it made?

Production begins with a careful selection of the bunches and gentle pressing to obtain clear musts. Fermentation takes place at controlled temperatures in inert vessels to enhance varietal freshness. The secondary fermentation occurs in-bottle using the Champenoise Method, and aging on the lees lasts 14 years. Disgorgement is done without dosage liqueur, yielding a Pas Dosé profile that enhances salinity and purity.

Tasting notes

In the glass, it displays a straw yellow hue with fine, persistent perlage, marking its long maturation. The nose reveals notes of grapefruit, apple, and almond, with hints of licorice and evolved nuances from prolonged lees contact. On the palate, it's dry, fresh, and creamy, with solid structure and lively tension. The finish is long, savory, and clean, with citrus echoes and a sharp close.

Food pairing

Excellent as an apéritif for those who enjoy a crisp, precise sip. It pairs beautifully with margherita pizza, seafood, and seafood pasta such as spaghetti with clams. Its freshness and savoriness match well with raw fish, oysters, and French-style scallops. The creamy texture from long lees aging also complements fried fish and mild soft cheeses.

Serving suggestions

Serve between 8 and 10°C in a tulip glass to highlight the perlage and aromatic complexity. It suits social occasions, toasts, and seafood dinners where precision and depth without sweetness are desired. Thanks to extended lees aging, the wine can evolve in the bottle. After opening, it shows best within the first hours and keeps well if stored with an appropriate sparkling wine stopper.
