The Champagne Brut Magnum of Dom Pérignon is made from selected Pinot Noir and Chardonnay grapes. It is renowned for its elegant and full-bodied style, with a creamy texture and clear complexity. Long ageing on the lees, following the Traditional Method, brings aromatic precision and structure, offering this wine great aging potential and versatility in food pairings.
Where does it come from?
This Champagne comes from the Champagne region, in north-eastern France. Here, the sparkling wine tradition and the careful selection of grapes define its refined character and personality, which stand out for freshness and gustatory tension.
How is it produced?
Pinot Noir and Chardonnay grapes are harvested and gently pressed to obtain quality musts. The secondary fermentation in the bottle using the Traditional Method and long ageing on the lees, for about 72 months, enhance the structure and complexity of the wine. The Magnum format promotes a harmonious and gradual maturation.
Tasting notes
In the glass, the Champagne shows a brilliant straw yellow color with golden highlights and a fine, persistent perlage. The nose offers aromas of almond, followed by notes of cocoa, sweet spices and light smoky hints, with a background of dry pastries. On the palate it is warm, energetic and enveloping, with a velvety texture. The acidity supports the sip and the finish remains intense, complex and slightly spicy, with a clean and deep aftertaste.
What to pair it with
This Champagne pairs well with raw fish dishes, tartare and carpaccio, where freshness and creaminess enhance the iodized component. It is an excellent match for shellfish, and thanks to its structure and long ageing, it also goes well with hard-aged cheeses. It is also ideal with seafood dishes and raw preparations.
When to serve it
Perfect for special occasions or a seafood table, this Champagne is also enjoyed as a meditation wine at the end of a meal. Serve between 10 and 12 °C in a large tulip-shaped glass, avoiding temperatures that are too low, which would suppress the aromas. The Magnum format is particularly suitable for cellar storage, with gradual and integrated evolution. Store in the dark, horizontally, with stable humidity and free from vibrations.
