Where it comes from
The grapes come from the Les Plantes plot near Prieur des Noues, in the Bonnezeaux–Anjou area, in the heart of the Loire Valley. The temperate climate with Atlantic influence promotes gradual ripening and preserves lively natural acidity. The clay soils provide volume and support, while the mineral component of the terroir imparts a crisp, dry profile with a tense and persistent finish.
How it is produced
Harvesting aims to protect the integrity of the fruit and acid balance through meticulous selection in the vineyard. Spontaneous fermentation occurs in French oak barrels with native yeasts to enhance the varietal expression. The wine rests on its fine lees in wood; the extended contact with the lees increases complexity and stability. Bottling is done without filtration, in keeping with an artisanal philosophy.
Tasting notes
Straw yellow with golden highlights, a result of barrel vinification and lees aging. The nose offers pear notes, apple, and stone fruit with floral hints and a mineral trace reminiscent of wet stone and chalk. On the palate, it is dry, with well-integrated freshness and a slightly creamy texture; the sip is balanced with fruity returns and a savory finish of good persistence.
Food pairings
This Chenin Blanc easily accompanies fish and shellfish dishes, where its freshness and savoriness highlight the delicacy of the flesh. It also pairs well with soft cheeses, thanks to the structure provided by the clay soils and lees aging. Typical local pairings include zander with beurre blanc, oysters, seared scallops, and white fish tartare with citrus.
When to serve it
Ideal for a gourmet aperitif and to accompany an entire seafood meal or creamy dishes. Serve at 10–12 °C in a medium-sized glass to enhance its fruity, floral, and mineral notes. A brief aeration in the glass helps to define the aromas.
