Description
This Chianti Classico is the most historic wine of the Viticcio winery, produced in Greve in Chianti from Sangiovese grapes with a small addition of Merlot. The vineyards, cultivated organically at altitudes of 230 to 400 meters, are situated on clay soils rich in alberese and colombino stones and benefit from south, southwest, north, and south exposures.
The winemaking process involves alcoholic fermentation in stainless steel tanks at 26-30°C and a maceration period of 15 days. After malolactic fermentation, also carried out in steel, the wine ages for 12 months in barriques, followed by another 12 months in large Slavonian oak casks.
The wine appears a bright ruby red. The nose is complex, with aromas of red fruits, plum, and violet, accompanied by notes of blond tobacco, graphite, damp undergrowth, and toasted nuances. The palate is fresh, with elegant and balanced tannins, closing with a long finish of bitter cocoa and toasted flavors.
Ideal pairing with grilled red meats, pasta with ragù, and aged cheeses.
