Description
Colli Aprutini Pecorino Centovie by Umani Ronchi is a white wine produced in the Abruzzo region. The grapes come from the Centovie estate, located in Roseto degli Abruzzi. The vineyards are cultivated on deep clay-loam soils, with a sandy component and stones.
The harvest is carried out by hand in the first ten days of September to maintain the high acidity of the grapes and the perfect health of the fruit. The grapes undergo gentle pressing, and the free-run must is separated from the pressed must, cooled, and decanted statically. Fermentation takes place in steel tanks at a temperature of 16-18°C for 20 days. The wine is then aged for about 12 months in concrete and a further 5 months in the bottle before release.
The wine has a straw yellow color with greenish highlights. On the nose, it offers fresh aromas of white fruit and citrus, with mineral notes. On the palate, it is fresh and savory, with good acidity and a long, persistent finish.
Perfectly pairs with fish dishes, seafood, and fresh cheeses.
