The Brut Sparkling Wine Cadelvento by Venturini Baldini is born in the Colli di Scandiano e Canossa area and is made exclusively from Spergola grapes grown at an altitude of 280 meters on clay-limestone soils. The modern interpretation of an indigenous grape variety produces an elegant and fresh wine, capable of expressing its identity with style.
The winemaking involves a gentle pressing followed by fermentation at a controlled temperature to preserve the fragrance of the aromas. The sparkling process occurs with the long Charmat method, which allows for a fine and persistent perlage, enhancing the aromatic component of the wine.
In appearance, it shows a brilliant straw yellow color. The bouquet is broad and complex, with floral hints of jasmine and fruity aromas of pear, pineapple, and pomegranate, enriched by slight balsamic notes. On the palate, it is savory, with a pleasant and well-balanced acidity that gives freshness and drinkability.
It pairs perfectly with pasta and risottos with seafood, raw dishes, and fresh cheeses.
