Description
The Derthona Cavallina by Claudio Mariotto is made from Timorasso grapes grown in the Cavallina vineyard, located in the Vho area between 250 and 300 meters above sea level. The vines, almost 20 years old, are cultivated with respect for the environment, without the use of chemical fertilizers, herbicides, or systemic products, allowing the terroir to express itself in its purity.
The winemaking process involves gentle and slow pressing of the grapes, followed by spontaneous fermentation at controlled temperatures. The aging takes place for one year on noble lees in steel tanks with slight bâtonnage, followed by at least 12 months of rest in the bottle, giving the wine complexity, structure, and elegance.
It presents itself with an intense and bright golden-yellow color. On the nose, it is broad and refined, with mineral notes and hints of hawthorn, chamomile, peach, and apricot. On the palate, it is savory and harmonious, with a marked minerality and a fruity component that accompanies an elegant and persistent finish.
It pairs perfectly with fish dishes, shellfish, and aged cheeses.
