Description

Penfolds Bin 707 Cabernet Sauvignon is one of the most iconic interpretations of Australian Cabernet Sauvignon and fully reflects the style of the Penfolds maison. Made from grapes sourced from selected regions, including Coonawarra, Barossa Valley, Padthaway, and McLaren Vale, it combines fruit intensity, significant structure, and remarkable aging potential.

The winemaking follows a classic and decisive approach, with fermentation and maturation aimed at enhancing concentration, depth, and varietal character. The maturation takes place for about eighteen months in new American oak, providing structure, volume, and complexity, while maintaining the core expression of Cabernet Sauvignon.

In the glass, it shows a deep and dark purple-red colour. On the nose, it offers intense aromas of black olive, graphite, and tapenade, followed by notes of mint, Asian spices, sage, bay leaf, iris, and dried hibiscus; on the palate, it is full, compact, and enveloping, with long and ripe tannins, iron sensations, red and black berries, white chocolate, and a long-lasting finish.

It pairs perfectly with beef fillet, rack of lamb, or braised meat in red wine, bringing strength and elegance to richly flavoured and structured dishes.
