Description
Poja is obtained from pure Corvina Veronese grapes harvested in the homonymous farm, located in the municipality of Sant'Ambrogio di Valpolicella.
The harvest takes place during the month of October, leaving the bunches on the plant slightly overripe. After a soft pressing of the grapes, fermentation takes place in stainless steel tanks at a controlled temperature of 22-31 ° C for 12-15 days. Once the malolactic fermentation is finished, in oak barriques, the wine remains for 20 months in Allier oak barriques and then ends its evolution in the bottle for 10 months.
Wine with an intense ruby red color, it offers a rich and fragrant bouquet made of red fruit and spices, surrounded by notes of medicinal herbs. The taste is fresh and crunchy, with a juicy consistency and a great body that guides a long finish.
Ideal to combine with roasts and aged cheeses, it is perfect together with game and truffle, both white and black.
