What type of wine is it?
De Grendel Sauvignon Blanc is a South African white wine made exclusively from Sauvignon Blanc grapes, produced in the Cape Town area. The wine is vinified through fermentation in a temperature-controlled tank and undergoes a period of lees contact to enhance body and flavor. The result is a fresh and vibrant style, with a fruity and herbal aromatic profile, supported by pronounced acidity and a long finish.
Where does it come from?
The wine is produced in South Africa, in the Cape Town region. The grapes come from distinct plots, harvested and vinified separately to highlight the differences between the parcels. The territorial origin is reflected in an expression that offers freshness and aromatic intensity typical of Sauvignon Blanc.
How is it made?
Harvesting is done by hand over a period of three weeks, with separate collection of the different plots. After pressing, the must stays in contact with the skins for about 6 hours, then is racked and fermented in tank at controlled temperature for 22 days. At the end of fermentation, the wine rests on the lees for 80 days before bottling to provide greater structure and flavor definition.
Tasting notes
On sight, it appears straw yellow with greenish reflections. On the nose, it is intense and precise, with notes of pear, melon, lime and passion fruit, accompanied by herbal hints of sage and thyme. On the palate, the acidity is high, resulting in a vibrant and refreshing experience; fruity and herbal sensations return, with a long, clean finish.
Food pairings
It matches well with seafood dishes and light preparations: grilled salmon, fried fish, and first courses featuring shellfish. It also pairs nicely with chicken salad, thanks to the herbal aromatic profile and the persistent finish which complements the dish's more delicate components.
