Description

Simone Scaletta's Dolcetto d'Alba Viglioni was born in the homonymous vineyard located in the Langhe, a hilly area in southern Piedmont.

It is produced with 100% Dolcetto grapes, macerated on the skins in steel tanks at controlled temperature for 5 days. After racking, the wine undergoes an alcoholic and malolactic fermentation process in steel. Still in steel, the wine is refined for 9 months and is purified of solid residues with the only aid of decanting. Afterwards, once bottled without filtration, it rests for 3 months in the bottle before being marketed.

Viglioni is characterized by a bright ruby red color, enriched with violet reflections. The nose has fresh and fruity hints of blueberry, with hints of violet and pleasant velvety almond aromas. In the mouth it expresses pleasantness and harmony, combined with a delicate note of almond on the finish.

Perfect to accompany appetizers based on vegetables and cured meats, this wine is ideal in combination with soups and vegetable soups, risotto and dishes based on beef and veal.
