Description

The Etna Bianco Salisire Contrada Martinella from Azienda Vivera is a white wine made from Carricante grapes grown on the north-eastern slope of Etna, at about 800 meters above sea level. It comes from vineyards set on volcanic, stony soils, in a cool mountain climate with pronounced diurnal temperature swings.

The grapes are hand-harvested and gently pressed under inert, oxygen-free conditions. Fermentation takes place in stainless steel at controlled temperature, followed by a prolonged aging on fine lees and additional bottle maturation.

It shows a straw-yellow color. The aromatic profile is citrus-driven and mineral, while the palate is fresh, saline and very persistent, with a precise structure and a marked volcanic identity.

Ideal with oysters, fish carpaccio, tagliatelle with pistachio pesto, sea bass and veal rolls.
