Description
This Brut Metodo Classico sparkling wine from the Sosta Tre Santi line by Nicosia is made from Nerello Mascalese grapes grown on the southeastern slopes of Mount Etna, in areas such as Monte Gorna, at altitudes ranging between 650 and 750 meters above sea level. The temperate climate with strong temperature variations and the sandy volcanic soils, rich in minerals, give the wine a pronounced territorial identity.
The vinification begins with a manual selection of the grapes, harvested at the ideal time to obtain high acidity and low sugar content, essential characteristics for the sparkling wine base. After a gentle pressing, only the flower must from the first press is used. The alcoholic fermentation takes place at controlled temperatures for about three weeks. The base wine is aged in steel until the following spring when it undergoes secondary fermentation in the bottle. This is followed by a long aging of at least 36 months on the lees, completed by riddling, disgorgement, and a further aging in the bottle for at least another 6 months.
Visually, it presents a bright straw yellow color, with a fine and persistent perlage. The nose offers a complex and elegant profile, with floral notes, hints of dried fruit, and the characteristic aroma of bread crust and yeast. On the palate, it expresses great minerality and a well-balanced acidity, resulting in a harmonious, fresh, and persistent finish.
Ideal as an aperitif, it pairs perfectly with risotto with Parmesan, shellfish, even au gratin mollusks, dishes based on fatty fish, mixed fried foods, salmon canapés, flavorful cheeses or mortadella.
