Where it comes from
It is born in the vineyards of Castello Bonomi, located in the heart of Franciacorta, in a winery described as the only chateau of the denomination. This area of Lombardy is renowned for a viticulture focused on bottle-fermented wines and a strong local identity, here masterfully interpreted through Pinot Noir. The soil and climate context support a precise profile, where the connection between vineyard and cellar enhances the structure of the wine and its mineral accents.
How it is made
The wine is obtained solely from Pinot Noir grapes, hand-harvested in the third week of August. After the harvest, the bunches undergo a gentle pressing to extract the free-run juice, which then ferments at a controlled temperature. The base wine matures for about eight months in stainless steel before the second fermentation, followed by aging on the lees in the bottle for at least 30 months, a crucial stage for aromatic complexity.
Tasting notes
In the glass, it shows an intense pink color, with fairytale-like lobster nuances. The nose reveals a distinct fruity profile, with hints of wild berries that blend with citrus notes and the characteristic scent of bread crust. On the palate, the taste is rich and complex, supported by a mineral component that gives freshness, precision and balance between intensity and clarity.
