Its base comes from a gentle pressing of the free-run must, accompanied by partial maturation in oak barrels and expert ageing on the lees, which defines its gustatory precision.

Where it comes from

The grapes for this blend come from Bellavista’s most suitable plots, located in Franciacorta. The vineyards, with an average vine age of nearly thirty years, guarantee consistent quality of the raw material, ideal for creating an Extra Brut version. This hilly area in Lombardy stands out for its meticulous viticulture, focused on the choice of selected sites to ensure freshness, natural balance, and a clear mineral fingerprint to the wine.

How it is produced

The manual harvest takes place between late summer and early autumn. The free-run must is extracted through gentle pressing to preserve aromatic purity. The second fermentation follows Classic Method practices and involves ageing on the lees for about thirty months. A percentage of the base wines matures in oak barrels, while manual riddling completes a strict production cycle, essential to confer structure and lasting perlage.
